2018 Iron + Sand Cabernet Sauvignon
2018 Iron + Sand Cabernet Sauvignon Sustainably sourced from two renowned Paso Robles vineyards located in prime sub-AVAs. The San Miguel District AVA is subject to the effects of large diurnal shifts. El Pomar District has the marine fog to help cool vineyards. Aromas of dark plums, black cherries, freshly picked black berries and raspberries intertwined with hints of graphite and baking spices. Fermenters situated on top of storage tanks, allows for minimal pump usage while sending pomace to our press. Aged 9 -12 months in neutral French and American oak barrels.
Deep violet. This 2018 vintage has dark berries, cherry pit and a hint of licorice on the spice-accented nose. Chewy and energetic on the palate, offering bitter cherry, cassis and cracked pepper flavors and a touch of mintiness. Finishes long and taut, with building spiciness and gently chewy tannins that come in slowly.
Cabernet Sauvignon is a wine that needs to be drunk with food, given its acidity, tannins and alcohol. We don’t think there is a hard and fast rule for drinking wine with food, you drink wine you like with food you like to eat, but Cabernet Sauvignon is definitely a wine that does better with food than without food, as by itself, it can be overwhelming.
Iron + Sand
Born from the grit of Paso Robles, CA, Iron + Sand is a nostalgic nod to the natural draw of the historic hot springs, Iron Spring and Sand Spring, that propelled Paso Robles into a bustling destination known as California’s oldest watering place. Iron and sand are also important elements in the wine’s classic Paso terroir, as the sturdy iron trellising supports the bearing vines and the alluvial, well-drained sandy soils are the perfect match for Cabernet Sauvignon. Sourced from two sustainably farmed vineyards within the Paso Robles AVA, winemaker Maclain Atkinson uses neutral oak allowing the Paso Robles terroir to shine through.
