2019 Domaine Du Clos Des Poulettes Cote de Nuits-Villages Vierville The nose is full baking spices, oak, and tart plum; the palate undulates between plum, strawberry, and leather with a bit of tart cherry that stretches out on the finish.
The wine, like all the red wines at Domaine du Clos des Poulettes, is made in small thermo-regulated fermentation vats. After fermentation, the wine is then in cold maceration for 4-6 days, after which malolactic fermentation and aging takes place for 18 months in 228 liter oak barrels, of which up to 20% are new barrels. Bottling carried out after light clarification, but without filtration.
The Cote de Nuuits Viervilles are identical to those of Nuits: same orientation, same slopes, same geology, same grape variety (fine Pinot), same planting density: 10,000 vines per hectare, the highest in the world, same low yields , limited by a very severe pruning in royat.
