2020 Clement Menetou Salon Blc
2020 Clement Menetou Salon Blc Singing aromatics, fresh orchard fruit, lemon, citrus and wild white flowers. Clement’s release is terrifically fresh, fragrant and pure Sauvignon Blanc has made this address a benchmark for the appellation of Menetou-Salon. We strongly believe Isabelle & Pierre’s work easily rivals its famous Loire neighbor of Sancerre in both complexity and finesse.
Domaine De Chatenoy
It is in the house built by the hands of Pierre-Alexandre Clément, the great-great-grandfather of Anne, Marie and Pierre-Alexandre, in 1884, that our family will welcome you to share our passion and our vintages with you.
If the 19th century building, the current residence of Pierre-Alexandre, where he grew up with his sisters Anne and Marie, has hardly changed over the decades, the situation is quite different with the cellar, which is now modern and spacious!
The old vaulted cellar, witness to the birth of the first vintage of the family estate, remains in use and open to visitors.
The pressing of white wines, made from Sauvignon grapes, and rosés, made from Pinot Noir, is done in whole bunches using pneumatic presses to extract the juices delicately and ensure optimum quality.
The vinification of red wines, made from Pinot noir, is carried out in thermo-regulated stainless steel vats. It begins with a cold pre-fermentation maceration, an essential asset allowing the grape to express all its fruit aromas. Thermo-regulation is a means of scrupulously controlling fermentation. To this is added punching down, a gentle and ancestral technique designed to extract the components of the grape that will make it a great wine: colors, tannins and aromas.
