92-94 Points! The 2020 Savigny-lès-Beaune 1er Cru La Dominode (Domaine Louis Jadot) is excellent, offering up aromas of raspberries and plums mingled with sweet spices, woodsmoke and raw cocoa. Medium to full-bodied, velvety and concentrated, with lively acids and a long, penetrating finish, it’s seamless and complete. Thin-skinned, finicky and temperamental, Pinot Noir is also one of the most rewarding grapes to grow and remains a labor of love for some of the greatest vignerons in Burgundy. Fairly adaptable but highly reflective of the environment in which it is grown, Pinot Noir prefers a cool climate and requires low yields to achieve high quality. Outside of France, outstanding examples come from in Oregon, California and throughout specific locations in wine-producing world. Somm Secret—André Tchelistcheff, California’s most influential post-Prohibition winemaker decidedly stayed away from the grape, claiming “God made Cabernet. The Devil made Pinot Noir.”
The commune of Savigny-lès-Beaune is in the north of the Côte de Beaune and produces 90% red wines. Les Vergelesses is located on the sloping hillside of Bois Noël, near the Pernand vineyards, facing south on light, well-draining soils. The Pinot Noir grapes are fermented in vats for up to 4 weeks, and then the wine is matured in oak barrels for 12 to 15 months before bottling.
Louis Jadot’s greatest presence is in the Côte de Beaune, and this can be seen clearly in the house’s 50 Premiers Crus from the region.
