A walled in single vineyard shapes like a butterfly. This small superbly sited vineyard lies in the center of the appellation just above the village of Savennieres. Here the terroir is sand over layers of black schist. Quite a cool and crystalline style of fruit on the nose, with sugared plums and mirabelles, dusted with white pepper. The palate continues in the same vein, cool, refined and correct, with a rather sinewy intertwining of peach, apricot, white pepper and apple, set within a tense and energetic middle and finish, with veins of bitter phenolic grip and firm acidity. This is mouthwateringly good, and will age slowly in the Baumard style over the two decades.
