As ever, it’s a remarkably unshowy, undemonstrative, stealthy wine, despite its fame and the reputed showiness of the variety. All is held in check by those clinging cool clays.

Give it time in decanter, glass or mouth, and you’ll see figures and allusions quietly stirring. As usual, this Sauvignon will be very pleasing when young. It will take five to six years to relax and loosen up. No doubt, it will evolve serenely for more than fifteen years.

Domaine Didier Dagueneau is one of France’s great iconic estates. Since 1982 Domaine Dagueneau has produced singular, mind bendingly complex and age-worthy Sauvignon Blanc in Pouilly-Fumé. The stunning purity and depth of Dagueneau Pouilly-Fumé is something every serious wine lover needs to experience at least once in his/her life. Few wines have developed as devoted a cult following as those of the late Didier Dagueneau. His son has taken over wine-making and he has the deftly tough as his father. His Louis-Benjamin Dagueneau has been named Winemaker Of The Year by La Revue du Vin de France. Now 2021 is a tiny vintage, down 60%. Dagueneau decided to combine all his famous cuvees into a single unique wine called XXI (Twenty-One). 2021 is a return to a classic vintage with an elegant balance of refreshing acidity and a great expression of the flint-scattered clay terroir of St Andelain. Definite collectible, pinnacle white wine.
