PERGOLAIA ‘CAIAROSSA’
Pergolaia by Caiarossa is an elegant expression of the Tuscan coast, crafted with a strong sense of traditional Tuscan character while offering a fresh, vibrant and contemporary style. Produced in Tuscany from carefully selected parcels and hand-harvested grapes, the wine is built around Sangiovese, supported by complementary international varieties such as Merlot and Cabernet Franc. Each variety is vinified separately in concrete and wooden tanks using slow fermentations and gentle extraction before the final blend is assembled. The wine then spends approximately 12 months ageing in wooden casks, allowing the fruit, structure and savoury character to come together harmoniously.
In the glass, Pergolaia displays a bright ruby-red colour with attractive garnet depth. The nose opens with expressive aromas of ripe cherry, red berries, dark cherry and dried fruit, complemented by delicate floral notes and hints of blood orange. With further aeration, earthy nuances emerge alongside sweet pipe tobacco, cinnamon, liquorice and subtle spice. These layered aromas give the wine an appealing balance between fresh Tuscan fruit and more savoury, mature complexity.
On the palate, Pergolaia is fresh, juicy and beautifully rounded, with Sangiovese providing lively acidity and a distinctly savoury backbone. Ripe cherry, raspberry and red berry flavours are joined by darker berry tones, plum and subtle blackcurrant. Notes of cocoa, liquorice, clove, earthy spice and tobacco add depth, while the texture remains smooth and supple. Fine-grained tannins provide definition without overpowering the fruit, creating a balanced and approachable structure with an elegant Tuscan freshness.
The finish is clean, savoury and persistent, leaving lingering impressions of ripe cherry, red berries, spice, cocoa and gentle earthy tones. Its combination of freshness, polished tannins and rounded fruit makes Pergolaia particularly versatile, offering enough structure for a substantial meal while retaining the graceful drinkability associated with Sangiovese-led Tuscan reds.
Food Pairing: Pergolaia is an excellent companion to classic Italian cuisine and richly flavoured Mediterranean dishes. Serve it alongside grilled or roasted beef, veal, lamb, pork, Tuscan-style sausages, roast poultry and cured meats. It also works beautifully with tomato-based pasta, wild-boar ragù, mushroom dishes, herb-roasted vegetables and aged cheeses such as Pecorino Toscano and Parmigiano-Reggiano.
Serving Suggestion: Serve at approximately 16–18°C to highlight its fruit, acidity and savoury complexity. A young bottle benefits from 20–30 minutes of breathing before serving, while a more mature vintage can be enjoyed directly after opening. Serve in a generous Bordeaux or large Italian red-wine glass to allow the aromas of cherry, herbs, spice and earthy notes to fully develop.
